How do the sacrifices relate to the New Testament?

Leviticus 4:35 (ESV)

35 And all its fat he shall remove as the fat of the lamb is removed from the sacrifice of peace offerings, and the priest shall burn it on the altar, on top of the LORD’s food offerings. And the priest shall make atonement for him for the sin which he has committed, and he shall be forgiven.

On the most basic level, the sacrificial death of bulls, goats, and lambs serve as shadows of what Christ will do on the cross. The death of Jesus, the Lamb without spot or blemish, is not merely a record on the pages of history. His death is efficacious. The removal of sin was complete when all sin was transferred to Jesus who bore it on the cross outside the camp of Jerusalem. Furthermore, the New Testament does not limit the application of Christ’s death to cleansing the person. It also affirms that the sanctuary has been purified by the blood of Christ so that we now have access into the heavenly court (Hebrews 9:22–24). As a result, Christians may draw near to God with hearts sprinkled clean.
