What is the significance of eating unleavened cakes?

Joshua 5:11 (ESV)

11 And the day after the Passover, on that very day, they ate of the produce of the land, unleavened cakes and parched grain.

The mention of unleavened cakes is a reference to the seven-day feast of unleavened bread, which began on the fifteenth day of the month (Leviticus 23:6–8), the day after Passover.
