What is significant about the priests eating the grain offering?

Leviticus 6:16 (ESV)

16 And the rest of it Aaron and his sons shall eat. It shall be eaten unleavened in a holy place. In the court of the tent of meeting they shall eat it.

The actions of the priest signified that the Lord had accepted the grain offering. In the first place, part of the offering was burned with fire. Secondly, by receiving and eating the grain offering, the priest communicated to the worshipper that it was an acceptable offering.
